Purslane is an herb that contains high levels vitamins A, C and E, as well as omega-3 fatty acids. The mild flavored stems and leaves of purslane can be eaten raw or cooked. Although widely used in Europe and Asia, purslane is less common in the United States, but can be found at most specialty food stores.
